The Kadai skewers come with a square cross section which fits into a cut out on the skewer rack, place the rack on the kadai grill over the hot coals then add your skewers, the rack lifts the skewers so that the food does not stick to the hot grills, the square cross section stops the skewers twisting round under the weight of the food which means all sides of the skewer can be cooked evenly.
